mojito salmon

have you tried the mojito salmon from trader joe's? i am not a salmon lover, but i have been trying to incorporate salmon into my diet (and my family's diet) over the past year or so. my attempts at making it in a variety of ways have been, well... less than stellar. not matter how i make it, it still tastes so... salmon-y.  well while shopping at trader joe's i spied 'mojito salmon' in the frozen section. i like mojitos... so i decided to give it a try.

it was delicious! and so frickin' easy. i highly recommend it. everyone ate it and calvin did not even ask for ketchup!

i have been absent from this space for awhile.  the holidays and life just sort of pushed the blogisphere to a back (way back) burner.

but life has become a bit simpler these days so i hope to pop in here a bit more often.  i can't make any promises, our little family has a few changes coming up in the next few months, but my hope is to be here.

my little one is becoming more and more independent with each passing day.  i must hear "i do it myself" fifty times a day.  it reminds me that he is not my little baby anymore.  i have to allow him the space to figure the world out, on his terms.  it doesn't matter that he folds the laundry by scrunching up each item, or gets sopping wet when washing dishes, or dumps the entire contents of the dustpan on the floor before he makes it to the trashcan.  he is learning, trying, and eventually, if i can learn to let go, he will figure out his own way.  i will follow patiently, mindfully as he leads.
